Aber was unterscheidet Wei\u00dfwein neben der Rebsorte noch von Rotwein und Ros\u00e9? Es ist die klassische Herstellungsmethode \u2013 auch wenn sie ebenso mit roten Trauben funktioniert und nicht die einzige f\u00fcr wei\u00dfe Rebsorten ist. Das Spektrum reicht vom normalen Wei\u00dfwein \u00fcber den Blanc de Noirs bis zum Orange Wein.<\/strong><\/p>\n<p>Nat\u00fcrlich ist es die <a href=\"\/magazin\/weinwissen\/wein-optisch-beurteilen-das-auge-trinkt-mit\/\">Farbe<\/a>, die den Wei\u00dfwein von seinen Geschwistern Rotwein und <a href=\"\/magazin\/weinwissen\/rose-wein\/\">Ros\u00e9<\/a> unterscheidet. Doch wieder ist es nicht einfach nur die helle, wei\u00dfe, gr\u00fcne Rebsorte, die den Unterschied ausmacht. Eine entscheidende Rolle spielt erneut die Herstellungsmethode f\u00fcr die Weinfarbe Wei\u00df.<\/p>\n<h2>Wei\u00dfwein: Schalenkontakt gen Null<\/h2>\n<p>Die Farbstoffe stecken vorwiegend in der Schale der Beere. Doch w\u00e4hrend viel Farbe bei Rotweinen\u00a0 gew\u00fcnscht ist, suchen Wei\u00dfweine helle Gelbt\u00f6ne, mal mit gr\u00fcnem, goldenem oder bernsteinfarbenem Einschlag. F\u00fcr das Weinmachen bedeutet dies, den Kontakt von Most, also dem reinen Saft der Trauben, mit den Schalen so kurz wie m\u00f6glich zu halten. Denn: Ein Blick auf beispielsweise reife Grauburgunder-Beeren zeigt, dass auch wei\u00dfe Rebsorten Farbe besitzen k\u00f6nnen. Allgemein gilt, dass alle Rebsorten, die ein Grau, Gris oder Grigio im Namen tragen, eben nicht nur hell sind, sondern einen grau-r\u00f6tlichen Farbstich aufweisen. Nach dem Pressen ziehen sie daher sofort den Most ab und starten direkt mit der alkoholischen G\u00e4rung. In den meisten F\u00e4llen werden Wei\u00dfweine in Edelstahltanks verg\u00e4rt, die den fruchtigen, frischen Eindruck des Weins unterstreichen. Zudem minimieren die <a href=\"\/magazin\/weinwissen\/weinbau-und-oenologie-zum-studieren\/\">\u00d6nologen<\/a> den Kontakt mit Sauerstoff, um die fragilen Fruchtaromen und die <a href=\"\/magazin\/weinwissen\/saeuregehalt-im-wein-der-schluessel-zu-geschmack-und-qualitaet\/\">S\u00e4ure im Wein<\/a> zu erhalten.<\/p>\n<h2>Wei\u00dfwein: selten Im Holz<\/h2>\n<p>Die wenigsten Wei\u00dfweine reifen in <a href=\"\/magazin\/weinwissen\/wein-im-holzfass-eine-holzige-angelegenheit\/\">Holzf\u00e4ssern<\/a>. Der Einfluss des Fasses ist selten erw\u00fcnscht, wenn es um Frische geht und daf\u00fcr stehen schlie\u00dflich Wei\u00dfwein. Die Ausnahme best\u00e4tigt dabei die Regel. Haupts\u00e4chlich hochwertige Wei\u00dfweine wie mancher <a href=\"\/magazin\/weinwissen\/weissburgunder\/\">Wei\u00df<\/a>&#8211; oder <a href=\"\/magazin\/weinwissen\/grauburgunder\/\">Grauburgunder<\/a> aus <a href=\"\/magazin\/weinlaender\/wein-aus-deutschland\/\">Deutschland<\/a> sowie Chardonnay aus dem <a href=\"\/magazin\/weinwissen\/die-weinregion-burgund\/\">Burgund<\/a> oder <a href=\"\/magazin\/weinwissen\/kalifornien\/\">Kalifornien<\/a> werden nicht selten in gro\u00dfen Holzf\u00e4ssern verg\u00e4rt und in kleinen <a href=\"\/magazin\/weinwissen\/angeberwissen-was-bedeutet-barrique\/\">Barriques<\/a> gereift. Allerdings geschieht dies im besten Fall sehr behutsam. Auch mineralische T\u00f6ne aufgrund des Bodens lassen sich bei Wei\u00dfweinen h\u00e4ufiger finden als bei Rotweinen. <a href=\"\/magazin\/weinwissen\/riesling\/\">Riesling<\/a> ist daf\u00fcr ein gutes Beispiel, denn er gilt als Rebsorte, die die Bodenbeschaffenheit sehr deutlich im fertigen Wein zum Vorschein bringt. Mit ein Grund daf\u00fcr, warum Riesling meist reinsortig ausgebaut wird. Besonders fruchtbetont fallen die sogenannten <a href=\"\/magazin\/weinwissen\/bukettsorten-aromen-im-ueberfluss\/\">Aroma- oder Bukettrebsorten<\/a> aus, wie etwa <a href=\"\/magazin\/weinwissen\/sauvignon-blanc\/\">Sauvignon Blanc<\/a>, <a href=\"\/magazin\/weinwissen\/muskateller\/\">Muskateller<\/a> und <a href=\"\/magazin\/weinwissen\/gewuerztraminer\/\">Gew\u00fcrztraminer<\/a>.<\/p>\n<h2>Wei\u00dfweine: trocken bis edels\u00fc\u00df<\/h2>\n<p>Wei\u00dfwein gibt es von <a href=\"\/magazin\/frag-die-weinfreunde\/welche-weissweine-sind-trocken\/\">trocken<\/a> \u00fcber <a href=\"\/magazin\/frag-die-weinfreunde\/was-bedeutet-ein-feinherber-wein\/\">halbtrocken und feinherb<\/a> bis edels\u00fc\u00df. Entscheidend daf\u00fcr ist der Zuckeranteil in den Beeren sowie die Dauer der alkoholischen G\u00e4rung. Dabei verwandeln Hefen den <a href=\"\/magazin\/weinwissen\/restsuesse-was-vom-zucker-uebrigbleibt\/\">Zucker<\/a> im Most in Alkohol. Stoppt man diesen Prozess fr\u00fcher, etwa durch Herunterk\u00fchlen des Weins, wird die Hefe inaktiv und es bleibt mehr Zucker im Wein zur\u00fcck. L\u00e4sst man hingegen die alkoholische G\u00e4rung l\u00e4nger laufen, erh\u00f6ht sich der Alkoholgehalt und der Zuckergehalt nimmt ab.<\/p>\n<p>Bei <a href=\"\/magazin\/frag-die-weinfreunde\/was-sind-praedikatsweine\/\">deutschen Pr\u00e4dikatsweinen<\/a> ist der Zuckerhalt, respektive der <a href=\"\/magazin\/frag-die-weinfreunde\/was-bedeutet-oechsle\/\">Oechsle-Grad<\/a>, des Weins f\u00fcr die Qualit\u00e4tsstufe ausschlaggebend. Ein <a href=\"\/magazin\/weinwissen\/angeberwissen-was-ist-kabinett-wein\/\">Kabinett<\/a> enth\u00e4lt weniger Zucker als eine Sp\u00e4tlese oder gar Trockenbeerenauslese. Folgerichtig zeichnen sich die \u201es\u00fc\u00dferen\u201c Weine durch einen geringeren Alkoholgehalt aus. Weniger als zehn Prozent Alkohol sind bei einer Trockenbeerenauslese keine Seltenheit.<\/p>\n<h2>Rote Traube trifft Wei\u00dfwein: Blanc de Noirs<\/h2>\n<p>Allerdings gibt es auch Wei\u00dfweine sowie helle <a href=\"\/magazin\/weinwissen-2\/prickelndes\/\">Schaumweine<\/a> aus dunklen, roten Trauben \u2013 franz\u00f6sisch <a href=\"\/magazin\/weinwissen\/alles-eine-frage-der-schale-blanc-de-noirs\/\">Blanc de Noirs<\/a> genannt. Einfach ausgedr\u00fcckt handelt es sich dabei um dunkle Trauben, die wie ein Wei\u00dfwein erzeugt werden: also kein Kontakt von Most und Schalen, damit der Wein keine Farbe abbekommt. Dennoch weisen Blanc de Noirs etwas expressivere Fruchtaromen und ein Mehr an Struktur als ein klassischer Wei\u00dfwein auf. Mit Blick auf die oben beschriebene Herstellungsmethode von Wei\u00dfwein l\u00e4sst sich schnell erkl\u00e4ren, was es mit dem Orange im Namen auf sich hat. Die Weinmacherin oder der Winzer produziert einen Orange Wein, wie einen Rotwein, aber eben mit wei\u00dfen Trauben. Will meinen: mit Schalenkontakt auf der Maische und das \u00fcber einen l\u00e4ngeren Zeitraum. Dadurch gelangen mehr Farbstoffe in den Wein, der anschlie\u00dfend nicht mehr Varianten von hellem Gelb aufweist, sondern tats\u00e4chlich orange- oder bernsteinfarbene T\u00f6ne mit r\u00f6tlichem Einschlag aufweist. Wegen des Plus an Struktur und den satteren Aromen sind Orange Weine oft exzellente Speisebegleiter.<\/p>\n<p>Der Orange Wein ist keine modische Erfindung der Gegenwart. In Georgien erzeugen die Winzer auf diese Art ihre Amber Weine bereits seit Jahrtausenden. Sie verg\u00e4ren helle Trauben in im Boden eingelassenen, gro\u00dfen Tonamphoren. Die Schalen setzen sich mit der Zeit am Boden des Qvevri ab, so der Name dieser Amphoren, der Wein wird oben abgesch\u00f6pft und fertig ist der Amber Wein.<\/p>\n<div class=\"product-slider\"
