Der italienische Stiefelabsatz ist traditionelles Weinbaugebiet und hat mit <a href=\"\/magazin\/weinwissen\/primitivo\/\">Primitivo<\/a> und <a href=\"\/magazin\/weinwissen\/negroamaro\/\">Negroamaro<\/a> gleich zwei Hauptdarsteller.<\/strong><\/p>\n<p><a href=\"\/magazin\/weinwissen\/apulien-weinkeller-italiens\/\">Apulien<\/a> ist den meisten ein Begriff. Seit dem Siegeszug des <a href=\"\/magazin\/weinwissen\/primitivo\/\">Primitivos<\/a> ist die Weinregion sozusagen in aller Munde. Betrachtet man die Region Apulien genauer, f\u00e4llt besonders die Halbinsel Salento ins Auge. Sie bildet gewisserma\u00dfen den Absatz des <a href=\"\/magazin\/weinwissen\/weinland-italien\/\">italienischen Stiefels<\/a> und ist an drei Seiten von Wasser umgeben: im Westen grenzt Salento an den Golf von Tarent, im S\u00fcden an das Ionische Meer und im Osten erstreckt sich die Adria.<\/p>\n<h2>Mediterranes Klima auf der Halbinsel<\/h2>\n<p>Die Lage zwischen den Meeren hat gro\u00dfen Einfluss auf den Weinbau in Salento, sorgt sie in der ansonsten eher flachen Region f\u00fcr ausreichend Wind zum K\u00fchlen der Trauben sowie f\u00fcr ein deutliches Abfallen der Temperaturen w\u00e4hrend der Nacht. Ein wichtiger Umstand in dem mediterranen <a href=\"\/magazin\/weinwissen\/beste-voraussetzungen-klima-und-wein\/\">Klima<\/a> mit trockenen, hei\u00dfen <a href=\"\/magazin\/weinwissen\/spritz-getraenke-fuer-den-sommer\/\">Sommern<\/a>, die den Reben viel abverlangen und mit besonders hohen Zuckerwerten f\u00fcr reichlich Alkohol im Wein einstehen. Umso wichtiger ist es, den richtigen Zeitpunkt f\u00fcr die Lese zu finden und die Trauben ohne Oxidation in den Keller zu bekommen. Viele Weing\u00fcter und Genossenschaften lesen daher grunds\u00e4tzlich in den fr\u00fchen Morgenstunden, solange es noch k\u00fchler ist. Allgemein gesprochen lauten also die Gefahren, die sich aus diesen klimatischen Bedingungen f\u00fcr die Reben ergeben: Wassermangel, Sonnenbrand an Bl\u00e4ttern und Trauben sowie eine zu fr\u00fche Reife.<\/p>\n<h2>Salento ist rot: die Rebsorten<\/h2>\n<p>Apulien und Primitivo, diese Paarung kommt als Erstes in den Sinn. Doch auf der Halbinsel gibt es eine weitere Rebsorte, die genauso wichtig ist: <a href=\"\/magazin\/weinwissen\/negroamaro\/\">Negroamaro<\/a>. Sie ist bekannt f\u00fcr die Weine der DOC Salice Salento. Daneben spielen noch die roten Trauben Malvasia Nera, Nero di Troia, Aleatico und <a href=\"\/magazin\/weinwissen\/susumaniello\/\">Susumaniello<\/a> eine Rolle. Zwar dienen diese Rebsorten fast ausschlie\u00dflich als Verschnittweine f\u00fcr <a href=\"\/magazin\/frag-die-weinfreunde\/was-ist-eine-cuvee\/\">Cuv\u00e9es<\/a>. Doch zeigt der <a href=\"\/famiglia-rocca-primitivo-susumaniello-collezione-oro-angelo-rocca.html\" target=\"_blank\" rel=\"noopener\">Primitivo Susumaniello Collezione Oro von Angelo Rocca<\/a> beispielsweise auf, was diese Reben beitragen k\u00f6nnen. Zwar gibt es auch <a href=\"\/magazin\/weinwissen\/weisswein-rebsorten-herstellung-co\/\">Wei\u00dfweine<\/a> aus Salento, doch spielen die wei\u00dfen Rebsorten <a href=\"\/magazin\/weinwissen\/chardonnay\/\">Chardonnay<\/a>, <a href=\"\/magazin\/weinwissen\/fiano\/\">Fiano<\/a> und Pinot Bianco im Anbaugebiet nur die zweite Geige. Seit einigen Jahren kommen aus Salento auch immer mehr <a href=\"\/magazin\/weinwissen\/rose-wein\/\">Ros\u00e9weine<\/a>. F\u00fcr die Rosatos setzen die Erzeuger \u2013 wenig \u00fcberraschend \u2013 auf ihre Paradereben Primitivo und Negroamaro.<\/p>\n<h2>DOC und DOCG in Salento<\/h2>\n<p>Wie die DOC Salice Salento f\u00fcr Negroamaro steht, verk\u00f6rpert die DOC Primitivo di Manduria die Hochburg der zweiten gro\u00dfen Rebsorte aus Salento. Sie gilt als absolute Top-Appellation f\u00fcr Primitivo. Die weiteren <a href=\"\/magazin\/frag-die-weinfreunde\/was-bedeutet-doc\/\">DOC-Anbaugebiete<\/a> (Denominazione di Origine Controllata) sind Leverano, Nard\u00f2, Alezio, Matino, Galatina, Copertino, Squinzano, Brindisi und Ostuni. Mit Primitivo di Manduria Dolce Naturale gibt es sogar eine DOCG (Denominazione di Origine Controllata e Garantita), die exklusiv einem S\u00fc\u00dfwein vorbehalten ist.<\/p>\n<div
